Got the Steak Knife Set

My Shogun Chef Knife is perfect!

Good value overall

I got the Gyonin Series Paring Knife and a Sharpening Stone. The knife itself is really good for the price point; it handles small tasks well and feels sturdy. The edge retention seems decent. Mostly sitewide during Black Friday or Christmas. I've seen some bundle discounts sometimes on their site for specific sets, but not usually individual knives by series.

Yeah, I ordered a Santoku knife last month, got it in about 5 days to Tacoma. So Seattle should be pretty similar, I'd guess.

Mine took closer to a week and a half for a bigger order (knife block and a couple knives) to Portland. Not Amazon fast, but reasonable for a specialty store.

Are those 'Damascus' patterns on Kyoku knives real or just laser etched? Don't want to drop cash on something that's just for show.

From what I understand, Kyoku's Damascus is legit layered steel. They're not just etched on, you can see the actual layers.

It's real Damascus steel. They stack different types of steel and forge them together. Looks amazing in person too.

Thinking of getting a Shogun chef knife, but also looking at Dalstrong. Has anyone used both Kyoku and Dalstrong? How do they compare feel-wise or just overall quality?

I have a Kyoku Shogun and a Dalstrong Gladiator. The Kyoku feels more refined and lighter, better balance for me. Dalstrong is a bit more 'beefy' if that makes sense.

Kyoku blades tend to be thinner and have a sharper edge out of the box, more traditional Japanese feel. Dalstrong can be good value but sometimes the fit/finish isn't quite as precise, in my experience.
